The Homesteading Course at Sovereignty Ranch

October 4 - 10th, 2024

Join chefs and regenerative farmers Mollie Engelhart and Elias Sosa to learn the skills you need to know how to start on your own amazing journey of homesteading using regenerative techniques!

Learn animal husbandry (cows and chickens), food preservation (that you get to take home with you!), composting, making cheese, butter, and yogurt, sourdough bread making, transplanting, seed saving, electro-culture, and more!

And to top it off, the week will be full of other fun experiences like a regenerative farming movie series, bonfires, and swimming in the pond right on the property!


Tickets include approximately 4 classes per day, course materials, accommodations (unless otherwise noted), 3 meals per day, and shuttle to and from the San Antonio Airport.

There is also a Weekend Course option available if you cannot attend the full weeklong course!

What is included

    Learn what you need to know about raising and caring for chickens, cows, and pigs on a homestead.

  • Cheese, yogurt and butter!

    Learn to take raw milk and turn it into fresh cheese, butter and yogurt! We will walk you through every step of the process.

  • sourdough breadmaking

    Learn hands-on how to make your own wild-fermented sourdough bread from scratch.

  • preserving food

    Preserve and ferment produce using Chef Mollie’s straightforward techniques. You will take home what you make in class!

  • Compost, saving seeds, and Transplants

    Learn to grow your own food and medicine! We will demonstrate our favorite seed saving, planting, and transplanting tips using regenerative practices.

  • electroculture and more!

    Enhance the vitality of your homestead with electroculture! We will create our own electroculture devices.

ENjoy fun experiences like a regenerative farming movie showing, bonfires, and swimming in the pond right on the property!

Frequently asked questions

  • Chef Mollie Engelhart and Elias Sosa have created an amazing menu for this event! Your ticket includes three meals per day using organic and regeneratively sourced produce, eggs, dairy, and meats. There will be vegetarian and gluten free options available.

  • San Antonio airport is about an hour drive away from the ranch. A shuttle to and from the airport is included in the price of your ticket.

  • Kids are welcomed for this event! Bring your future Homesteaders with you so they can start learning foundational skills early! There will be homesteading programming specifically for kids aged 6 and up. Kids tickets include three kids meals per day with organic and local food prepared by Chef Mollie & Elias. Please note that there will not be child care or programming for children who are 5 years old and younger.

  • The homesteading course has elements that require more than one day to complete so we are not currently offering day passes however we do offer a weekend ticket for those who would like to attend Friday - Sunday evening.

  • You are welcomed to book accommodations off the ranch, or commute from home if you live nearby. If you wish to commute to the workshop each day you can purchase the Homesteading Course ticket (No Housing).

  • If you are sharing accommodations we ask that each person purchase a ticket. This will help to cover the cost of the food, materials, and instructors for the course. The Homesteading Course ticket (No Housing) is for anyone who is sharing a room including couples and families.
